3 frozen ripe bananas peeled
1/4 cup lemon juice
3 cups unsweetened soy rice or coconut milk, chilled
2 teaspoons vanilla extract
5 teaspoons of agar agar flakes
1/4 cup boiling water
3 egg whites (only use eggs that have been stored under refrigeration)
1 teaspoon ground nutmeg
LSA for sprinkling
Few sprigs of fresh mint
(GF, DF, YF)
Purée the frozen bananas with the lemon juice.
Add agar agar flakes to the boiling water and simmer until it has dissolved then fold through the banana mixture.
Beat the milk and vanilla extract until thick and creamy, and fold through the banana mixture.
Beat the egg whites until stiff, add the nutmeg and fold into the banana mixture.
Pour into individual glass dishes, sprinkle with LSA and garnish with sprigs of fresh mint.
